Enjoy this delicious salad with cherry tomatoes (rich in lycopene for heart health), radishes (cleanses the digestive system and detoxifies) and other nutrient-rich vegetables.
1 cup cherry tomatoes, halved and seeded
6 radishes, chopped
1 medium cucumber, chopped
3 green onions, chopped
1/4 bunch of cilantro or parsley, chopped
1/2 tbsp. olive oil
1/2 tsp vinegar
salt and pepper to taste
1. Cut vegetables into small size cuts
2. In a mixing bowl, combine cherry tomatoes, radishes, cucumbers, green onions and cilantro or parsley
3. Whisk olive oil, vinegar, salt and pepper together to blend
4. Pour over salad and toss lightly to coat. Serve immediately.
